Cream Cheese Frosting

This is a very simple cream cheese icing, to perfectly compliment a carrot cake, red velvet cake, or truly anything if you're a cream cheese lover like me!

Note: It's very important that the butter and the cream cheese are both at room temperature when making this recipe. If the cream cheese is too cold, it will split the icing, and never become smooth.

Cream Cheese Frosting Recipe

Ingredients

8oz Cream Cheese (room temperature)

½ cup Butter (room temperature)

4 cups Icing Sugar

1 tsp Vanilla

¼ tsp Salt

Directions:

  1. Place the room temperature cream cheese and butter into the bowl of your mixer. With the whisk attachment, combine them at medium speed until smooth.

  2. Lower the speed of your mixer, and add the icing sugar ½ cup at a time, fully incorporating each cup before adding the next. You may want to add a little more or a little less icing sugar, just add it slowly until it is a consistency that you are happy with.

  3. Add the vanilla and salt, and whisk on medium speed until smooth.

  4. Use it right away, if you refrigerate it before decorating a cake, it may never get back to a smooth texture.

Step-by-Step Instructions

Gather your ingredients: Cream cheese, butter, icing sugar, vanilla and salt.

Into your mixing bowl, place 8oz of room temperature cream cheese,

and ½ cup of room temperature butter.

With the whisk attachment, mix on medium speed until fully combined.

Start adding 4 cups of icing sugar, in increments of ½ cup.

Fully incorporate each addition of sugar before adding the next. You may want to add a little less or a little more sugar. Add it in slowly and stop when you are happy with the consistency.

Scrape down the sides of the bowl frequently.

Add 1 tsp of vanilla,

and ¼ tsp of salt.

Mix until smooth. Be careful not to over-whip the frosting, or it may split. Cream cheese icing can be a delicate balance of mixing it enough, without going too far.

Your finished frosting should be smooth and creamy, but firm enough to hold it's shape.

Spread that gorgeous frosting on a cake, or pipe it onto cupcakes, and enjoy!
