Banana Bread

My go-to Banana Bread recipe! I peeled countless bananas while trying to create the perfect loaf, and I think this recipe is just about that. It stays moist for several days, though it’ll be hard not to finish it in one. You can add 1 cup of walnuts, chocolate chips, or whatever your heart desires. I love to mix sweet and salty, so I use salted butter in my recipe, but unsalted is great too if that suits you.

Ingredients:

½ cup White Sugar

½ cup Brown Sugar

3 Ripe Bananas

½ cup Butter

2 Eggs

1 tsp Vanilla

2 Tbsp Milk

2 cups Flour

1 tsp Baking Powder

1 tsp Baking Soda

1 tsp Salt


9 x 5” loaf pan (or larger, but not smaller)


Directions:

  1. Preheat the oven to 325℉

  2. In the bowl of your mixer, measure the white sugar, brown sugar, and bananas. Mix with the paddle attachment on low speed until combined, and the bananas are mostly broken up and smooth

  3. Melt the butter in a saucepan. Pour it into the bananas and sugar, and mix until combined.

  4. Mix in the eggs, vanilla and milk.

  5. In a separate bowl, mix together the flour, baking powder, baking soda and salt.

  6. In two stages, mix the dry ingredients into the batter. Scrape down the sides and mix to combine. The batter should be consistent, but still have banana lumps.

  7. Spray the sides of your loaf pan with non-stick oil, and pour in the batter.

  8. Bake for 50-60 minutes, turning halfway through. The banana bread is done when a toothpick inserted comes out clean, and the loaf springs back up when gently pressed.


Step-by-Step Instructions

Gather all of your ingredients: White sugar, brown sugar, bananas, butter, eggs, milk, flour, baking powder, baking soda, and salt.







Measure the butter into a saucepan, and melt it.








Into your mixing bowl, measure ½ cup white sugar,









½ cup brown sugar









and 3 ripe bananas









With the paddle attachment, mix together








until the bananas are broken up and the sugars are all mixed in.








Pour in the melted butter and mix until smooth









In a small bowl, crack 2 eggs,









add 1 tsp vanilla,









and 2 Tbsp milk.








With the mixer on low speed, pour in the egg mixture.








In another small bowl, measure 2 cups flour,









1 tsp baking powder,









1 tsp baking soda,









and 1 tsp salt.








Pour half the flour into the mixing bowl, and mix on a low speed until just combined.








Pour in the rest of the flour









and mix until everything is incorporated.









Scrape down the bottom of the bowl.









Spray the sides of a loaf pan with non-stick cooking spray, and pour in the batter.








Gently smooth the top of the batter.








Bake at 325℉ for 45 - 55 minutes. The banana bread is done when a toothpick inserted comes out clean, and the top springs back when gently pressed.






Let it cool in the pan for about 10 minutes, but you can slice it while it's still warm.









Spread a little butter on there, and enjoy!
